Vegan Recipe of the day!
Played with some food I had in the house and it came out delicious. Yum!
1 16 ounce package firm or extra firm tofu, drained and crumbled
4 tablespoons of go veggie grated Parmesan
1 1/2 tablespoons nutritional yeast
3 tablespoons soy sauce
1 cup of peppers (I used red, green and yellow) chopped
1 1/2 teaspoons minced garlic
7 hot nacho sliced jalapeños, chopped
1/3 cup fresh basil, chopped
Salt & Pepper to taste
Mix the first four ingredients in a vitamix and sauté the rest of the ingredients for about five minutes. Add the tofu mixture to the veggies and mix well.
Scoop in a muffin pan and bake at 350° for about 25 minutes until golden brown and firm to touch. Enjoy, I sure did?
I love avocados
Eating Avocados gives your body what it needs.
They have powerful antioxidants to reduce free radicals, lots of vitamins & minerals and lots of other healthy benefits. There are so many ways to enjoy an avocado. I bake them, use them in smoothies, make avocado cookies & ice cream and as you can see use them in salads.
For me an avocado a day keeps the Doctor away?
Trying a new recipe today, here it is. So tasty!
Ingredients
Brussel Sprouts (quartered)
1 Sweet Potato (peeled and cubed small)
2 Tablespoons coconut oil
2 Tablespoons maple syrup
2 teaspoons smoked paprika
1/2 teaspoon chili powder
1/2 reason sea salt
Preheat oven to 350 degrees. Mix all ingredients in bowl and coat
completely, then spread on a lined baking sheet. Bake for 30-40 minutes. Enjoy this delicious Vegan lunch!

Ingredients
Makes 10 brownies
2 medium to large sweet potatoes
2/3 of a cup of ground almonds
1/2 a cup of buckwheat flour (brown rice flour will also work)
14 medjool dates
4 tablespoons of raw cacao
3 tablespoons of pure maple syrup
a pinch of salt
Preparation
1. Start by pre-heating the oven to 350ºF, then peel the sweet potatoes. Cut them into chunks and place into a steamer for about twenty minutes, until they become really soft.
2. Once they are perfectly soft and beginning to fall apart remove them and add them to a food processor with the pitted dates – this will form one of the sweetest, creamiest, most delicious mixes ever!
3. Put the remaining ingredients into a bowl, before mixing in the sweet potato date combination. Stir well.
4. Place into a lined baking dish and cook for about twenty minutes, until you can pierce the brownie cake with a fork bringing it out dry. Remove the tray and allow it to cool for about ten minutes. This is really important as it needs this time to stick together. Remove the brownies from the tray, leaving it another few minutes before cutting them into squares – then dig in and enjoy!
